This four-course vegetarian meal with drink pairings celebrates seasonality through ephemeral edible installations and dishes, featuring locally produced ingredients and recipes from the book ๐๐ฏ, ๐๐ณ๐ฐ๐ฎ, ๐ข๐ฏ๐ฅ ๐๐ช๐ต๐ฉ.
MENU
I. Edible installation with fruit carvings, hibiscus and Perricon infused tea eggs, preserved garlic toast on gojuchang bread, romesco, and cruditรฉs
II. Bitter melon soup stuffed with tofu in woodear mushroom and daikon broth
III. Stuffed vegetable assemblage with tomatoes and peppers. Escarole Gomae. Served with pickled persimmon, pickled guava, and pickled butterfly carrots.
IV. Chรจ Sฦฐฦกng Sa Hแบกt Lแปฑu served in young coconuts. Served with saffron infused fresh hazelnut milk (dairy-free)

All seats come with a printed takeaway including select contributions from the book and recipes alongside a take home surprise banana leaf wrapped pyramid dumpling for the following morning!

The book is a collectively constructed lexicon that collates a series of terms selected by twenty-four contributors, ranging from botanists to artists to agricultural producers and more. The interactive book, including edible and non-edible recipes, explores the notion of collaborative survival through a series of sensorial pedagogies, implementing the body as a fulcrum for digesting terminology. ๐๐ฏ, ๐๐ณ๐ฐ๐ฎ, ๐ข๐ฏ๐ฅ ๐๐ช๐ต๐ฉ romances the possibility of reading and doing as a means of metabolizing, braiding together practice and pedagogy through an intimate inquiry of contemporary consumption.
