Local Foods Meat Share - Whole Hog SPECIAL HOWE FARMS EDITION

This ticket is a buy-in fee for an exclusive meat share in collaboration with Local Foods. The Sunday January 31st meat share will be a whole Ossabaw x American Guinea Hog x Mangalitsa hog from Howe Farms in Crown Point, Indiana. Using nose to tail butchery to break down this sustainably-raised hog we will focus on a combination of traditional butcher shop cuts such as shoulder roasts, bone-in chops, and ground pork, as well as some traditional cuts intended for dry curing (though also delicious simply cooked!), including coppa, lonza, and fioco/culatello. The shares will be organized to include either cuts intended primarily for cooking or cuts intended primarily for dry-curing.

This whole hog share will be split six ways - three shares with cuts for cooking, and three shares with cuts for curing. Both sets of shares will weigh 15-20 pounds - enough to stock your freezer and leave you with a few cuts to enjoy right away. All cuts are portioned to feed 2-4 people, and they are wrapped and ready for the freezer.

This ticket gives you access to your share of meat at the discounted price of $8.20 per pound. You will be charged on the exact weight of your share by Local Foods on the pick-up day. Including the buy-in cost, the total per pound price is to about $10.80 per pound.

The ticket is also good for one Share Owner's Guide to recognizing, cooking, freezing, and thawing the cuts in the share, so you can get the most out of your share with confidence. The curing share will include some resources for home-curing.

Contact-free pickup will be available at Local Foods on Sunday January 31st and throughout the following week, during their business hours. Ticket holders will be charged for their share of the meat by Local Foods on Sunday January 31st.
