We are back this month after a brief hiatus, cooking for summertime with the light, briny coastal cuisine of Liguria.
Ligurian cuisine has a special way with preparing greens, perhaps most famously in pesto – a simple, yet meticulously crafted sauce, traditionally made through pounding by hand with a mortar and pestle. Liguria's capital city, Genoa gives its namesake to the famed basil version, pesto genovese. And then there is preboggion, the mythical filling for a pot-bellied ravioli called pansoti, made with fourteen different wild herbs – perhaps a testament to "weeds" being merely a matter of perspective.
Dinner will begin with glass of wine, followed by a five-course meal, served mostly family-style. A thoughtfully curated wine list will be available for purchase with by-the-bottle options. Guests are welcome to bring their own bottles for a $15 corkage fee. This menu is pescatarian.
